Ingredients
- 1 lb Italian sausage links, browned and thinly sliced
- 1 onion, chopped
- 1 to 2 carrots, peeled and chopped
- 2 cups tomatoes, diced
- 2-14 oz cans vegetable broth
- 14 oz can pizza sauce
- 2 cups water
- 1 bay leaf
- 1 to 2 zucchini, shredded or sliced
- 9 oz package refrigerated cheese tortellini, uncooked
- Garnish: Parmesan cheese curls
Directions

In a slow cooker, combine all ingredients except zucchini, tortellini and garnish. Cover and cook on LOW for 5-7 hrs.

Add zucchini and tortellini to slow cooker; cover and cook on LOW for one additional hour. At serving time, discard bay leaf. Ladle into soup bowls; garnish with curls of Parmesan.
