Zucchini-Tortellini Harvest Soup

Ingredients

  • 1 lb Italian sausage links, browned and thinly sliced
  • 1 onion, chopped
  • 1 to 2 carrots, peeled and chopped
  • 2 cups tomatoes, diced
  • 2-14 oz cans vegetable broth
  • 14 oz can pizza sauce
  • 2 cups water
  • 1 bay leaf
  • 1 to 2 zucchini, shredded or sliced
  • 9 oz package refrigerated cheese tortellini, uncooked
  • Garnish: Parmesan cheese curls

Directions

  1. In a slow cooker, combine all ingredients except zucchini, tortellini and garnish. Cover and cook on LOW for 5-7 hrs.

  2. Add zucchini and tortellini to slow cooker; cover and cook on LOW for one additional hour. At serving time, discard bay leaf. Ladle into soup bowls; garnish with curls of Parmesan.
