Baron’s Blackberry Cobbler

I doubled the berries and cornstarch/flour mixture for a family reunion dish, but then, I grow the berries in my yard. I see no reason this same dough could not be used for peach, cherry, apples and blueberry cobbler or any combination if your choice.

Ingredients
- 1/2 cup sugar
- 2 Tbsp. cornstarch
- 6 cups berries
- 1/4 cup melted butter
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 2 cups milk
- 1 Tbsp. vanilla
- 1/4 cup melted butter
Directions
- Preheat oven to 350 degrees.
- Whisk 1/2 cup sugar with cornstarch in a small bowl; set aside.
- Place berries in a large mixing bowl, and drizzle with 1/4 cup melted butter. Sprinkle with cornstarch mixture. Toss to coat well. Spread berries in a 9 × 13 baking dish.
- In another bowl, whisk flour 1 1/2 cup sugar, baking powder, and salt; blend. Stir in milk, vanilla, 1/4 cup melted butter. (batter will be slightly lumpy). Pour over berries.
- Place baking dish on a large baking sheet (covered with foil, if you wish). Bake until golden, about 55-60 minutes. (If you double the berry mixture, it may take slightly longer to bake, but be careful not to let the top burn).
