Anchovy-Garlic Dressing

Ingredients

  • 1/3 cup oil, preferably olive
  • 1/4 cup minced parsley
  • 4 anchovy fillets, minced
  • 2 Tbsp. finely minced green onions
  • 2 cloves garlic, crushed
  • 3 Tbsp. red-wine vinegar
  • 3/4 tsp. nutmeg
  • 3/4 tsp. salt
  • Fresh-ground pepper to taste

Directions

  1. Mix all ingredients until well blended. Use to marinate drained cooked broccoli, green beans, Brussel sprouts, hominy, kidney beans or other cooked dried beans.
