Sloppy Joe Biscuit Cups

Ingredients

  • 1 lb ground beef
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green pepper
  • 1/2 cup barbecue sauce
  • 12 oz tube refrigerated flaky biscuits (10)
  • 1/2 cup shredded cheddar cheese

Directions

  1. Heat oven to 400. In a skillet, saute the beef and vegetables over medium heat 5-7 minutes or until beef is crumbly and no longer pink; drain. Stir in barbecue sauce; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally.

  2. Separate dough; flatten biscuits into 5-inch circles. Press into greased muffin cups. Fill with beef mixture.

  3. Bake 9-11 minutes or until biscuits are golden. Sprinkle with cheese; bake 1-2 minutes or until cheese is melted.
