Almond Squash

Ingredients

  • 2 medium butternut squashes (about 2 1/2 lbs. total)
  • Salt
  • 5 to 6 Tbsp. butter or margarine
  • 3/4 to 1 cup pure maple syrup
  • 1/2 cup toasted slivered almonds

Directions

  1. Peel and seed squashes and cut in large chunks. Cook, covered, in boiling salted water
  2. until very tender. Drain well. Add butter and mash squash or beat with electric beater until smooth. Stir in maple syrup. Turn into buttered 1 or 1 1/2-quart baking dish, sprinkle with almonds and bake in preheated 350 degree oven 20 minutes, or until heated through.
