Almond Perch Saute

Serves 6 people

Ingredients

  • 2 lbs. perch, dressed or fillets
  • 1 cup milk
  • 1 egg, beaten
  • 1 cup flour
  • 1/2 tsp. salt
  • 1/2 cup vegetable or olive oil
  • 1 1/2 cups sliced mushrooms
  • 1/2 cup hickory-smoked-flavored almonds, chopped
  • 3 Tbsp. butter or margarine
  • 2 Tbsp. parsley, chopped
  • 1 Tbsp. lemon juice

Directions

  1. Combine milk and egg. Mix flour and salt. Dip fish into egg mixture, then coat with flour mixture.
  2. Saute fish in oil over medium heat, turning once. Meanwhile, combine remaining ingredients in saucepan and saute over medium heat for 5 to 7 minutes.
  3. Transfer fish to serving platter. Spoon mushroom/almond mixture over fish.
