Ingredients
- 2 Tbsp. vegetable oil
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup chopped green pepper
- 1/4 tsp. garlic powder
- 1 can (28 oz.) tomatoes
- 1 can (8 oz.) tomato sauce
- 1/2 tsp. oregano
- 1/4 tsp. thyme
- 1/2 tsp. salt
- 1 can (4 oz.) sliced mushrooms
- 2 cans (4 1/2 oz. each) deveined jumbo shrimp
- 1/2 cup whole blanched almonds
Directions
- Pour oil into a large skillet. Add onion, celery and green pepper. Cook about 5 minutes. Stir in garlic powder. Add tomatoes, tomato sauce, seasonings and mushrooms. Simmer, uncovered, 20 to 30 minutes.
- Meanwhile, cut shrimp in half lengthwise. Add shrimp and almonds to sauce. Cook about 5 minutes longer or until heated through.
