Almond Shrimp Italiano

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green pepper
  • 1/4 tsp. garlic powder
  • 1 can (28 oz.) tomatoes
  • 1 can (8 oz.) tomato sauce
  • 1/2 tsp. oregano
  • 1/4 tsp. thyme
  • 1/2 tsp. salt
  • 1 can (4 oz.) sliced mushrooms
  • 2 cans (4 1/2 oz. each) deveined jumbo shrimp
  • 1/2 cup whole blanched almonds

Directions

  1. Pour oil into a large skillet. Add onion, celery and green pepper. Cook about 5 minutes. Stir in garlic powder. Add tomatoes, tomato sauce, seasonings and mushrooms. Simmer, uncovered, 20 to 30 minutes.
  2. Meanwhile, cut shrimp in half lengthwise. Add shrimp and almonds to sauce. Cook about 5 minutes longer or until heated through.
