Ingredients
- 3 lbs potatoes, peeled and cut into 1-inch cubes
- 3 jalapeno peppers, sliced and seeded
- 1/4 cup butter, cubed
- 2 tbsp water
- 3 garlic cloves, minced
- 3/4 tsp salt
- 1/4 tsp pepper
- 4 medium sweet red, orange or yellow peppers, halved and cut into 1-inch strips
- 1 large onion, halved and thinly sliced
- 1 tsp olive oil
- 5 Italian sausage links
- Chopped fresh basil
Directions

Place the first 7 ingredients in a slow cooker; toss to combine. Top with sweet peppers and onion.

In a large skillet, heat oil over medium-high heat. Brown sausages on all sides; place over vegetables. Cook, covered, on LOW 5-6 hours or until potatoes are tender.

Remove sausages; cut diagonally into pieces. Remove vegetables with a slotted spoon; serve with sausage. Sprinkle with basil.
