Almond Sunset Chicken

Ingredients

  • 1 large roasting chicken
  • 3 cups water
  • 8 almond sunset tea bags
  • 1/2 cup honey
  • 4 Tbsp. butter
  • 1/2 cup almond slivers
  • 1 cup juice from chicken

Directions

  1. To prepare chicken: Preheat oven to 350 degrees. Pour 3 cups water in a covered baking dish and place tea bags in the water.
  2. Rinse the chicken and line cavity with tine foil. Place 4 of the damped tea bags on the foil inside the chicken, then place chicken in the dish and cover. Bake 20 minutes per pound of chicken.
  3. For the sauce: Combine honey, butter and almonds in a saucepan over low heat. About 15 minutes before your chicken will be ready, uncover it and retrieve 1 cup of the chicken drippings with a turkey baster. Add this juice to your sauce and bring to a brief boil.
  4. Glaze chicken with one-half cup of the sauce and continue to bake uncovered until golden brown. Serve with remaining sauce on the side.
