American Lamb Cassoulet

Ingredients

  • 12 oz. cooked lamb, cut into 3/4 inch cubes
  • 1 tsp. Italian Seasoning, crushed
  • 1 can (10 oz.) tomatoes and green chilies
  • 1 can great northern beans, drained
  • 1/2 cup sliced green onion
  • 1 can (8 oz.) low salt tomato sauce
  • 1 clove of garlic, minced
  • 1 medium zucchini, halved lengthwise and sliced (about 1 1/2 cups)
  • 1 tsp. instant beef bouillon granules

Directions

  1. In a 2 quart microwave casserole, combine tomatoes and green chilies, onion, garlic, beef bouillon granules and Italian Seasoning.
  2. Cover and cook for 4 to 5 minutes or until onion is tender. Stir in lamb, beans, tomato sauce and zucchini. Cover and cook 100% power in the microwave for 12, until heated through. to 14 minutes, stirring twice
