Angie’s Roasted Harvest Vegetables

Ingredients

  • 2 medium sweet potatoes, peeled and cut into wedges
  • 2 parsnips, peeled and sliced
  • 1 fennel bulb chopped
  • 1 medium onion, sliced
  • 1/2 cup Kraft Catalina Dressing
  • 1/2 cup cranberry juice
  • 1/4 cup maple syrup.

Directions

  1. Toss together the cut vegetables; spread evenly in a baking dish.
  2. Mix the dressing and cranberry juice together with the maple syrup. Pour over vegetables.
  3. Bake at 350 degrees for 50 minutes or until vegetables are tender.
