Angie’s Roasted Harvest Vegetables

Ingredients
- 2 medium sweet potatoes, peeled and cut into wedges
- 2 parsnips, peeled and sliced
- 1 fennel bulb chopped
- 1 medium onion, sliced
- 1/2 cup Kraft Catalina Dressing
- 1/2 cup cranberry juice
- 1/4 cup maple syrup.
Directions
- Toss together the cut vegetables; spread evenly in a baking dish.
- Mix the dressing and cranberry juice together with the maple syrup. Pour over vegetables.
- Bake at 350 degrees for 50 minutes or until vegetables are tender.
