Angel Pecan Pie

Ingredients

  • 20 buttery crackers, crushed
  • 1 cup chopped pecans
  • 1 cup sugar, divided
  • 4 egg whites
  • 1 tsp. vanilla
  • 1/2 cup heavy cream, whipped, sweetened with 3 Tbsp. sugar
  • 1 cup coconut OR chocolate toffee chips OR sweetened strawberries

Directions

  1. Combine crushed crackers, pecans and 1/2 cup sugar.
  2. Beat egg white until stiff; gradually beat in remaining 1/2 cup sugar and vanilla into egg whites. Fold in cracker mixture.
  3. Spray a 10 inch pie plate with nonstick spray. Spread margarine mixture on the bottom and sides of pie pan, making shape of pie.
  4. Bake in 325 degree oven for 30 minutes until lightly brown. Cool. Beat cream until stiff; add sugar and gently mix. Spread whipped cream over shell. Sprinkle with desired topping before serving.
