Ingredients
- 20 buttery crackers, crushed
- 1 cup chopped pecans
- 1 cup sugar, divided
- 4 egg whites
- 1 tsp. vanilla
- 1/2 cup heavy cream, whipped, sweetened with 3 Tbsp. sugar
- 1 cup coconut OR chocolate toffee chips OR sweetened strawberries
Directions
- Combine crushed crackers, pecans and 1/2 cup sugar.
- Beat egg white until stiff; gradually beat in remaining 1/2 cup sugar and vanilla into egg whites. Fold in cracker mixture.
- Spray a 10 inch pie plate with nonstick spray. Spread margarine mixture on the bottom and sides of pie pan, making shape of pie.
- Bake in 325 degree oven for 30 minutes until lightly brown. Cool. Beat cream until stiff; add sugar and gently mix. Spread whipped cream over shell. Sprinkle with desired topping before serving.
