Apple Orange Salad

Good with ham, pork, duck or sausage.

Ingredients
- 2 red-skinned eating apples
- 1 can (11 oz.) mandarin-orange wedges, drained
- 1/3 cup frozen orange-juice concentrate
- 4 cups thinly shredded salad greens
- 1/4 cup vegetable oil
- Salt and pepper
- Toasted chopped walnuts or filberts
Directions
- Core apples and cut in eighths. Slice thin crosswise and combine in mixing bowl with next 2 ingredients. Toss lightly to mix.
- Just before serving, put greens in salad bowl, add fruit mixture and pour oil seasoned with salt and pepper on top. Toss, then sprinkle with nuts.
