Ingredients
- 3 eggs
- 1 jar (15 oz.) applesauce
- 1/2 cup sugar
- 1/2 cup light molasses
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/4 tsp. salt
- 1 tsp. grated lemon rind
- 1 Tbsp. lemon juice
- Unbaked 9-inch pie shell
- 1 cup heavy cream, whipped
Directions
- In large mixing bowl, beat eggs slightly with fork; add applesauce, sugar, molasses, ginger, nutmeg, salt, lemon rind and juice and mix thoroughly; pour into pie shell. Bake on lowest rack in preheated 400 degree oven about 55 minutes, or until knife inserted near center comes out clean. Cool, then chill. Top with whipped cream before serving.
