Apple- Sauerkraut Stuffing

Ingredients

  • 1/2 cup finely diced salt pork
  • 3/4 cup chopped onion
  • 3 large apples, peeled and coarsely chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. thyme leaves
  • 1 tsp. caraway seed
  • 1 can (1 lb.) sauerkraut, drained

Directions

  1. Cook salt pork until translucent. Add onion and apples and cook until tender. Add next 4 ingredients, then add sauerkraut and toss lightly. Use as stuffing for duck.
  2. makes 4 cups
