Apricot Curry Sauce

Ingredients

  • 1 12oz. can apricot nectar
  • 1/4 cup light corn syrup
  • 2 Tbsp. margarine
  • 1 Tbsp. lemon juice
  • 1 1/2 tsp. curry powder (or more)
  • 1 tsp. salt
  • 1 Tbsp. cornstarch
  • 2 Tbsp. cold water

Directions

  1. Combine first 6 ingredients, and bring to a boil stirring occasionally.

  2. In a small bowl, blend cornstarch and cold water. Add to sauce.

  3. Bring sauce to a boil and boil 2 minutes until thickened.
