Apricot Glazed Rum Cake

Ingredients

  • 1 pkg. dry yeast
  • 1/4 cup lukewarm water
  • 3/4 cup scalded milk
  • 3 cups flour
  • 1 tsp. salt
  • grated rind of 1 lemon
  • 1 tsp. rum
  • 1 cup margarine or butter
  • 3/4 cup sugar
  • 5 eggs
  • glaze:
  • 1 cup apricot jam
  • fruit juice or rum as needed

Directions

  1. Soften yeast in water. Add milk and beat in one cup flour. Let rise 1 1/2 hours.

  2. Cream shortening and sugar. Beatr in eggs, one, at a time. Add yeast mixture and remaining flour. Add salt, lemon rind and flavoring and beat well.

  3. Pour into greased Swirl mold and let rise until light.

  4. Bake at 350 degrees for 50-60 minutes. Let stand 5 minutes before removing from pan.

  5. Glaze: Sieve apricot jam to remove large solids. Heat and then with fruit juice or rum and pour over cake to cover.
