Apricot Green Salad with Creamy Dressing

This is one of my oldest recipes, so don’t remember where I got it.

Ingredients

  • torn fresh spinach leaves
  • torn fresh romaine lettuce
  • 1 can (8 oz.) apricot halves, drained (reserve syrup).
  • Dressing:
  • 3/4 cup mayonnaise
  • 1 1/2 tsp. prepared mustard
  • reserved apricot syrup
  • 1/4 tsp. paprika
  • salt to taste

Directions

  1. Combine equal parts spinach and romaine leaves in a salad bowl. Garnish with apricot halves. Chill while making dressing.

  2. Combine mayonnaise, mustard, reserved apricot syrup, paprika and salt to taste and blend well.

  3. Pour desired amount on salad and toss. Store leftover dressing, covered, in refrigerator.

  4. makes 1 1/3 cups dressing
