Apricot-Lemon Chicken

Ingredients

  • 4 boneless skinless chicken breast halves
  • 1 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground pepper
  • 2 tsp. canola oil
  • 1/3 cup apricot spreadable fruit
  • 2 Tbsp. water
  • 2 Tbsp. lemon juice
  • grated lemon peel

Directions

  1. Flatten chicken breast halves to 1/2-inch thickness.

  2. Combine curry powder, salt and pepper; sprinkle over chicken.

  3. In large skillet, cook chicken in canola oil over medium heat for 5-6 minutes on each side or until thermometer reads 170 degrees; remove to serving plate.

  4. Add spreadable fruit, water and lemon juice to pan; cook and stir until syrupy, about 2 minutes. Serve over chicken; sprinkle with grated lemon peel.
