Ingredients
- 4 boneless skinless chicken breast halves
- 1 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 2 tsp. canola oil
- 1/3 cup apricot spreadable fruit
- 2 Tbsp. water
- 2 Tbsp. lemon juice
- grated lemon peel
Directions

Flatten chicken breast halves to 1/2-inch thickness.

Combine curry powder, salt and pepper; sprinkle over chicken.

In large skillet, cook chicken in canola oil over medium heat for 5-6 minutes on each side or until thermometer reads 170 degrees; remove to serving plate.

Add spreadable fruit, water and lemon juice to pan; cook and stir until syrupy, about 2 minutes. Serve over chicken; sprinkle with grated lemon peel.
