Apricot Turnovers

Ingredients

  • 2 1/2 cups all-purpose flour, spooned into cup
  • 1/4 cup sugar
  • 3 tsp. double-acting baking powder
  • 3/4 tsp. salt
  • 1/2 cup butter or margarine
  • 2 eggs
  • milk
  • apricot preserves

Directions

  1. Put first 4 ingredients in bowl and cut in butter until fine crumbs are formed.

  2. Break eggs into 8 oz. measuring cup and fill with milk. Add to first mixture and stir with fork to form soft dough. Turn out on lightly floured board and knead a few turns.

  3. Roll out to aa rectangle 1/4 inch thick, and with floured knife, cut 2 1/2 inch squares. Put 1/2 tsp. apricot preserves in center of each square and fold over to form a triangle.

  4. Put on ungreased baking sheet and bake in hot oven (425 degrees) about 12 minutes.
