Arkansas Peanut Soup

Ingredients

  • 1/2 cup finely chopped celery
  • 3 Tbsp. finely minced onion
  • 2 Tbsp. butter
  • 1/4 cup all-purpose flour
  • 1 cup peanut butter
  • 4 cups chicken broth
  • 2 cups heavy cream
  • Salt and ground black pepper, to taste

Directions

  1. Braise the celery and onion in butter. When soft, smooth in the flour and cook a minute or two to ease the raw taste.

  2. Then smooth in the peanut butter, following with chicken broth and cream. B ring to just a boil. Season with salt and pepper, id desired, garnish with a few peanuts.
