Amish Lemon Pie

Ingredients

  • 2 Tbsp. margarine, softened
  • 1 cup sugar
  • 3 eggs, separated
  • 1/2 tsp. salt
  • Juice and grated rind of one lemon
  • 1 1/2 cups hot milk
  • 1 (9-inch) unbaked pie shell
  • Cool Whip or 1/2 pint heavy whipping cream, whipped

Directions

  1. Cream margarine and sugar; add egg yolks, beating well. Add flour, salt, lemon juice, lemon rind, and milk; blend well.

  2. Beat egg whites until stiff; fold into lemon mixture.

  3. Pour into pie shell; bake at 350 degrees for 35 minutes.

  4. Cool; top with Cool Whip or whipped cream sweetened with 3 Tbsp. sifted confectioners’ sugar.
