Ingredients
- 2 Tbsp. margarine, softened
- 1 cup sugar
- 3 eggs, separated
- 1/2 tsp. salt
- Juice and grated rind of one lemon
- 1 1/2 cups hot milk
- 1 (9-inch) unbaked pie shell
- Cool Whip or 1/2 pint heavy whipping cream, whipped
Directions

Cream margarine and sugar; add egg yolks, beating well. Add flour, salt, lemon juice, lemon rind, and milk; blend well.

Beat egg whites until stiff; fold into lemon mixture.

Pour into pie shell; bake at 350 degrees for 35 minutes.

Cool; top with Cool Whip or whipped cream sweetened with 3 Tbsp. sifted confectioners’ sugar.
