Apsaragus with Balsamic Butter

Ingredients

  • 1 lb. medium or large asparagus
  • 2 Tbsp. unsalted butter
  • 3 Tbsp. finely minced shallots or onions
  • 2 Tbsp. balsamic vinegar

Directions

  1. Peel and trim asparagus. Place in a pan of boiling salted water and boil 7 to 10 minutes, depending on size. Immediately remove from water and plunge into ice water until chilled. Drain and set aside.

  2. Combine butter, shallots and asparagus in a medium-size non-aluminum saucepan. Cook over medium heat, tossing asparagus in butter, until hot, about 5 minutes.

  3. Place asparagus on a serving platter. Stir vinegar into butter sauce in pan. Pour over asparagus and serve immediately.
