Asparagus and Eggs, Italian Style

Ingredients

  • 1 bunch asparagus (2 1/2 lbs.)
  • salt
  • 6 Tbsp. olive or other oil
  • Salt and pepper
  • 1/3 cup Italian-style grated cheese
  • 1 clove garlic
  • 8 eggs

Directions

  1. Cook asparagus in boiling salted water until tender, drain well and arrange whole spears in shallow broiler-proof baking dish.

  2. Pour 3 Tbsp. oil over top and sprinkle with salt, pepper, and the cheese. Halve garlic and saute slowly in remaining oil 5 minutes (do not brown).

  3. Remove garlic. Brown asparagus lightly under broiler.

  4. While browning, drop eggs into oil, cover and cook slowly 3 minutes. Serve 2 eggs on each portion of asparagus.
