Asparagus and Eggs, Italian Style

Ingredients
- 1 bunch asparagus (2 1/2 lbs.)
- salt
- 6 Tbsp. olive or other oil
- Salt and pepper
- 1/3 cup Italian-style grated cheese
- 1 clove garlic
- 8 eggs
Directions

Cook asparagus in boiling salted water until tender, drain well and arrange whole spears in shallow broiler-proof baking dish.

Pour 3 Tbsp. oil over top and sprinkle with salt, pepper, and the cheese. Halve garlic and saute slowly in remaining oil 5 minutes (do not brown).

Remove garlic. Brown asparagus lightly under broiler.

While browning, drop eggs into oil, cover and cook slowly 3 minutes. Serve 2 eggs on each portion of asparagus.
