Fish Stew

Ingredients

  • 2 16 oz. cans stewed tomatoes
  • 10 oz. can Rotel
  • 2 Tbsp. salsa
  • 2 bell peppers, chopped
  • 1 medium onion, diced
  • 1 lb. catfish
  • 1 cup rice
  • Salt and pepper

Directions

  1. Put first 5 ingredients in large skillet; cover and simmer 20 minutes until peppers and onions are tender.

  2. Add fish (in bite-size pieces) and rice; salt and pepper to taste.

  3. Cover and simmer 10-15 minutes or until rice is tender.
