Spicy Cheesy Chicken Noodle Soup

Ingredients

  • 3-4 chicken breasts
  • 10-12 cups water
  • onion powder
  • celery flakes
  • cayenne pepper
  • Salt
  • 16 oz. bag wide egg noodles
  • 8 oz. Velveeta Mexican cheese
  • Jalapeno peppers (optional)

Directions

  1. Boil chicken breasts (with bone and skin) in stock pot 25 minutes or until cooked through. Remove chicken; cool.

  2. Strain and return 10-12 cups of broth to stock pot. Add spices to taste; bring broth to a boil. Add egg noodles; cook 8 minutes.

  3. While noodles cook, debone and skin chicken breasts. Pull chicken into bite-size pieces. Cube cheese.

  4. When noodles are done, add chicken, cheese and jalapeno, if desired. Cover and removed from heat 5 minutes; stir.
