Trout Amandine

Ingredients

  • 1/4 cup flour
  • 1 tsp. salt
  • Freshly ground black pepper
  • 6 fresh or thawed trout
  • 1 cup butter
  • 1 cup sliced blanched almonds
  • 1 Tbsp. lemon juice
  • Lemon wedges

Directions

  1. Combine flour, salt and pepper. Roll trout in flour until coated. Saute trout in 12-inch skillet about 5 minutes per side with quarter cup butter; and another quarter cup as needed. Carefully move fish to heated platter; cover.

  2. Discard butter and wipe skillet. Add remaining butter and almonds. Cook over low heat, stirring frequently, until almonds become pale golden. Remove from heat; add lemon juice. Pour almond butter over trout. Serve with lemon wedges.
