Stuffed Pork Loin

Ingredients

  • 1/2 pork loin
  • Lemon juice
  • 8 oz. cream cheese
  • Bacon bits
  • 4-5 fresh jalapeno peppers
  • Old Plantation Barbecue Seasoning and Rub
  • Thick-sliced bacon

Directions

  1. Wash and pat dry pork loin. Slice pork loin (butterfly) to within three-quarters of an inch from bottom. Butterfly each half in same manner.

  2. Sprinkle lemon juice on loin. Spread cream cheese evenly over loin; sprinkle with bacon bits. Finely chop peppers and layer on cream cheese.

  3. Roll loin; tie with cotton string as tightly as possible. Apply rub to loin; refrigerate overnight.

  4. Put bacon on loin in basket-weave pattern; place on smoker. Cook until internal temperature reaches 160 degrees. Remove from heat; wrap in foil. Slice and serve in 20-30 minutes.
