Tex-Mex Bake

Ingredients

  • 4 cups cooked brown rice
  • 1 1/2 cup shredded 50% light jalapeno cheddar cheese, divided
  • 1 (4oz.) can chopped green chiles
  • 1 cup reduced-fat sour cream
  • 1/2 cup sliced green onions
  • 12 tsp. coarse salt
  • 1/4 tsp white pepper

Directions

  1. Heat oven to 350 degrees.

  2. In a large bowl, combine rice, 1 cup cheese, chiles, sour cream, green onions, salt and pepper; stir until blended.

  3. Coat an 8 × 8 inch baking dish with cooking spray. Spoon rice mixture into dish; top with nonstick foil and bake 15 more minutes or until bubbly.
