Asparagus Quiche

Ingredients

  • 9-inch pastry shell
  • 8 slices bacon, cooked crisp
  • 2 cups cooked asparagus in 1-inch pieces
  • 1 cup shredded Gruyere or Swiss cheese
  • 1 cup light cream or half-and-half
  • 3 eggs, slightly beaten
  • 1 tsp. dried tarragon or 1 Tbsp. minced fresh
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • Dash of pepper

Directions

  1. Prick pastry shell with fork and bake in preheated 450 degrees oven 7 minutes; cool. Crumble bacon in shell. Add asparagus, then cheese.

  2. In bowl, mix well cream, eggs, and seasonings. Pour gently over cheese. Bake in preheated 350 degree oven 30 minutes, or until set and puffy.
