Ingredients
- 1 lb. fresh asparagus
- 1 tsp. cornstarch
- 1 Tbsp. soy sauce
- 1 Tbsp. vegetable oil
- 4 green onions sliced
- 2 cups mushrooms. sliced
- 2 tomatoes, cut in chunks
- Rice, cooked
Directions

Snap off base of asparagus and slice into 2-inch lengths.

In small bowl, blend water and cornstarch. Stir in soy sauce and set aside.

Stir -fry asparagus and green onions in oil for about 4 minutes, stirring constantly. Add mushrooms and cook another minute, Stir and push vegetables to the sides; simmer for a minute, then stir in tomatoes and heat through.

Serve with cooked rice.
