Pineapple Cake

Ingredients

  • 1 20 oz. can sliced pineapple
  • 1/4 cup butter
  • 2/3 cup light brown sugar
  • 1 cup sifted flour
  • 3/4 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup shortening
  • 1/2 cup milk
  • 1 egg
  • 2 tsp. pineapple syrup

Directions

  1. Preheat oven to 350 degrees.

  2. Drain pineapple, reserving 2 tsp. syrup. melt butter in 10 inch oven-safe skillet over low heat. Add brown sugar, stirring until sugar is melted. Remove from heat.

  3. Arrange drained pineapple on sugar mixture in skillet. Set skillet aside.

  4. Into a medium bowl, sift flour with sugar, baking powder, and salt. Add shortening and milk. With electric mixer at medium speed, beat 2 minutes. Add egg and reserved pineapple syrup. Beat 2 minutes longer. Pour cake batter over pineapple in skillet, spreading evenly. Bake 40 to 45 minutes.
