Avocado-Spinach Soup

Ingredients

  • 2 cut-up peeled ripe avocados
  • 2 cups firmly packed fresh spinach
  • 2 cups beef broth
  • 1 1/2 cups milk
  • salt and pepper to taste
  • Garnish: lemon wedges or slices

Directions

  1. Combine avocado, spinach, and beef broth in blender. Whirl until smooth.

  2. Pour into bowl and blend in milk, and salt and pepper to taste.

  3. Chill and serve with lemon wedges or slices.

  4. makes 5 cups
