Avgolemono (Greek Lemon Soup)

Ingredients

  • 6 cups chicken broth
  • 1/2 cup uncooked rice
  • 3 egg yolks
  • 3 Tbsp. lemon juice
  • Garnish: chopped parsley, coarsely ground black pepper to taste

Directions

  1. Bring chicken broth to a simmer and add rice. Cover and simmer just until rice is done, about 15 minutes.

  2. Whisk egg yolks with lemon juice. Whisk a ladle of hot soup into egg mixture, then add back to pot.

  3. Garnish with chopped parsley and a little coarse black pepper.

  4. Serve with warm pitas and purchased hummus.
