Mango Salsa

Ingredients

  • 1 ripe, but firm mango, peeled and diced
  • 1 jalapeno or other hot chile, seeded and minced
  • 2 Tbsp. minced red onion (fresh or pickled)
  • 2 Tbsp. minced red bell pepper
  • 1 lime, halved
  • fresh cilantro, to taste, optional

Directions

  1. Combine the mango, jalapeno, red onion and bell pepper and mix well. Squeeze in lime juice. Cover and refrigerate until well chilled, if desired, stir in 1 to 2 Tbsp. minced fresh cilantro just before serving.

  2. makes about 2 cups.
