Ingredients
- 1 cup flour
- 1 cup cornmeal
- 1 tablespoon diced shallot
- 2 tablespoons finely chopped bacon
- 1 1/2 teaspoon chipped parsley
- 1/4 cup corn, fresh, frozen, or canned
- 1 1/4 teaspoons baking powder
- 2 teaspoons sugar
- 1 1/2 teaspoon fine/table salt
- 1/2 teaspoon black pepper
- 1 egg
- 1 cup milk
- Oil or shortening, for frying
Directions
- Preheat oil to a steady 350 degrees.
- In a large mixing bowl, combine all ingredients but egg, milk, and oil.
- In a separate, small bowl, combine the egg and milk and beat until a light yellow color.
- Just before frying, add wet to dry ingredients and mix well.
- Using a small spoon, scoop out about a tablespoon of dough and fry in the oil until golden brown on all sides, about 3 to 4 minutes, turning once to ensure even browning.
- Remove from oil and drain on paper towels.
- Serve warm, drizzled with butter or maple syrup, or tossed in Cajun seasoning.
