Ingredients

- 4 20-ounce porterhouse steaks
- 2 cups Yachtman's Steakhouse steak sauce (recipe below)
- Barbecue grill with mesquite charcoal
- Steak Sauce
- 4 to 6 ounces butter
- 2 tablespoons shallots, diced
- 1 sprig thyme, fresh
- 1/3 cup brown gravy
- 2 tablespoons tomato paste
- 1/2 cup prepared steak sauce
- 1 tablespoon distilled vinegar
- 1 tablespoon mesquite seasoning
- 2/3 cup water
- salt
- pepper
Directions
- Steak Sauce
- Lightly saute shallots and thyme in 1 ounce of butter.
- Add remaining butter and remaining ingredients.
- Simmer for 10 to 15 minutes and add salt and pepper to taste.
- Steak
- Light grill and allow coals to burn to a rich red glow (about 20 minutes).
- When ready, grill steaks to your desired specifications.
- Serve with steak sauce.
