Potato Leek Soup Recipe

Ingredients

  • 11/2 quarts Water
  • 11/2 Yukon Gold Potatoes
  • 11/2 oz Spanish Onion
  • 4 oz Heavy Cream
  • 1 pinch Salt
  • 1/2 pinch Pepper
  • 6 oz Leeks
  • 1/4 cup Olive Oil/Canola Blend
  • 1 tbsp Butter
  • 1/2 tsp Granulated Garlic Powder
  • 1/2 tbsp Vegetable Stock Powder
  • 1 tbsp Chives,minced

Directions

  1. In the olive oil, saute leeks, onions and granulated garlic until tender.
  2. Add potatoes. cook for 30 min.
  3. Add butter and cream, reduce.
  4. Add vegetable base to water.
  5. Add in all the liquids and spices.
  6. Cook for an additional 30 min.
