Ingredients
- 1 lb. ground beef
- 1/2 cup quick-cooking oats, uncooked
- 1 tsp. salt
- 1/8 tsp. garlic powder
- Dash of pepper
- 12 corn tortillas
- Vegetable oil
- 2 (10 oz.) cans enchilada sauce
- 2 cups cream-style cottage cheese
- 1 cup (4 oz.) shredded Cheddar cheese
Directions

Brown ground beef in a skillet; drain and stir in oats, salt, garlic powder, and pepper. Set aside.

Fry tortillas, one at a time, in 1/2 inch oil for 1 second on each side or just until tortillas are softened.

Drain on paper towels; dip each tortilla in enchilada sauce.

On each tortilla, place about 2 tablespoons meat mixture and 2 tablespoons cottage cheese; roll up tightly, and place in a lightly greased 13 × 9 × 2-inch baking dish.

Pour remaining enchilada sauce over top; sprinkle with cheese.

Bake enchiladas at 350 degrees for 30 minutes.
