Apple-Bread Pudding

Ingredients

  • 4 slices thin-cut protein bread
  • 1 1/2 cups skim milk
  • 4 eggs
  • 1 tsp. ground cinnamon
  • 1/4 cup sugar
  • Pinch of salt
  • 2 apples, pared cored and diced

Directions

  1. Lightly toast bread; cut into cubes. Place in bottom of a deep 6-cup baking dish. Heat milk to boiling; pour over bread cubes. Let stand 15 minutes.

  2. Beat eggs lightly with cinnamon, sugar and salt. Add apples. Combine with bread mixture in baking dish.

  3. Bake in slow oven (325 degrees) 35 minutes, or until pudding is set. Remove from oven; cool. Refrigerate pudding until ready to serve.
