Apple-Carrot Slaw with Pistachios

Serves 8 people

Ingredients

  • 6 cups carrots (about 7 large), shredded
  • 4 medium Fuji, Gala or other sweet apples, shredded
  • 1/4 cup lemon juice
  • 2 Tbsp. sugar
  • 1 1/2 tsp. ground cinnamon
  • Chopped pistachios, divided
  • Dash salt

Directions

  1. Combine first 5 ingredients in a large bowl.

  2. Add 1/2 cup pistachios; toss to combine. Season with salt to taste.

  3. Cover and refrigerate until serving. Just before serving, sprinkle with remaining pistachios.
