Ingredients
- 1 cup apple butter
- 1/2 cup cider vinegar
- 2 Tbsp. prepared mustard
- 2 Tbsp. butter or margarine
- Dash of pepper
- 4 duck hindquarters (about 2 1/2 lb.), skin pricked in several places

Basting sauce in small saucepan bring to boil all ingredients except duck; remove from heat.

Over charcoal: Arrange drip pan in center of grill with coals around pan. Place duck, skin side up, over drip pam 5 to 7 inches from slow coals. Close grill cover or cover with tent of heavy-duty foil. Grill 30 minutes on each side. Grill, covered, 30 to 45 minutes or until fork-tender and skin is brown and crisp, basting and turning every 10 minutes.

Under broiler: Place duck, skin side down on lightly greased broiler-pan rack. Broil at 350 degrees six inches from heat source 1 hour, turning once or twice. With skin side down, brush with sauce. Broil 10 minutes or until fork-tender and skin is brown and crisp, basting frequently.
