Apple Orchard Pork Chops

Ingredients

  • 2 tsp. vegetable oil
  • 4 lean pork center-cut loin chops, about 3/4 inch thick
  • Salt and pepper to taste-inch thick slices
  • 1 1/3 cups apple cider OR apple juice
  • 1/4 cup whole-grain Dijon mustard
  • 1/3 cup dried currants
  • 2 apples, unpeeled, cored and cut into 1/4 inch thick slices
  • 1/3 cup sliced green onions
  • 4 tsp. cornstarch
  • 1/4 cup water

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat. Brown chops about 2 minutes per side. Season with salt and pepper.

  2. While chops are browning, combine apple cider or apple juice with mustard in a small bowl. When meat has browned on both sides, pour juice mixture over chops.

  3. Cover pan and reduce heat to medium-low. Cook chops 4 minutes, then add currants, apples and green onions.

  4. Cover and cook 5 minutes more. Remove chops to a serving platter, tent with foil to keep warm.

  5. Combine cornstarch with water in a small bowl, then whisk into cooking liquid in pan. Cook and stir until thickened. Pour sauce and apples over chops and serve.
