Apple, Pear and Cranberry Salad

Ingredients

  • 2 navel oranges
  • 3 large Granny Smith apples, peeled, cored and cut into 1/2 inch pieces
  • 3 large Bosc pears, peeled, cored and cut into 1/2 inch pieces
  • 1 cup sun-dried cranberries
  • 1 Tbsp. fresh lemon juice
  • Mint leaves for garnish

Directions

  1. Grate 1 Tbsp. orange peel (not white part), set aside.

  2. Peel, section and cut both oranges into 1/2 inch pieces.

  3. Combine the oranges with apples, pears, cranberries, lemon juice and reserved orange peel. Toss well.

  4. Divide into 8 dessert dishes. Garnish with mint leaves.
