Ingredients
- 1 cup milk
- 2 eggs
- 2/3 cup flour
- 3 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. grated lemon peel
- 2 Tbsp. butter, melted
- Apple Filling:
- 2 cups apples, thick-sliced
- 3 Tbsp. sugar
- 1/2 tsp. cinnamon
- 2 Tbsp. butter or margarine
Directions

Put milk, eggs, flour, sugar, salt and lemon peel into blender container. Cover and process at medium speed until well blended.

Put butter into 9 inch pie plate. Bake in preheated 400 degrees oven for 30-35 minutes until puffy and deep golden brown. Put apple filling in center of Pfannkuchen. Serve immediately. Pancake will collapse shortly after removing from oven.

Apple Filling: Process apples in food processor.

Melt butter in a skillet. Add remaining ingredients. Cook over medium-low heat until apples are tender.
