Apples and Potatoes with Bacon

Also good with Canadian bacon or any other pork in place of the bacon.

Serves 6 people

Ingredients

  • 1/2 lb. sliced bacon, cooked and drained
  • 6 medium potatoes, peeled and quartered
  • 4 medium-size tart apples, peeled, quartered and cored
  • 2 medium-size sweet apples, peeled, quartered and cored
  • 1 cup water
  • Salt and pepper to taste

Directions

  1. Fry bacon until crisp; drain, reserving 3 Tbsp. drippings. Set bacon aside and keep warm.

  2. In a large pot bring potatoes, apples, water and reserved drippings to boil. Reduce heat; cover and simmer 30 minutes or until potatoes are tender.

  3. With potato masher, mash potato mixture to a thick puree; season with salt and pepper. Serve hot topped with bacon.
