Applewood and Peppered BLTs

Ingredients

  • 4 slices Italian bread or other crusty bread
  • mayonnaise, to taste
  • 1 to 2 ripe tomatoes, sliced
  • salt, optional
  • Romaine lettuce leaves, turn to fit the bread
  • 2 slices Applewood-smoked bacon, cooked just until crisp, or as desired, drained
  • 2 slices peppered bacon, cooked just until crisp, or as desired, drained

Directions

  1. Toast bread to desired color. Spread a thin layer of mayonnaise on one side of two slices of bread.

  2. Top the mayonnaise with sliced tomatoes. Lightly salt tomatoes, if desired. Top with a piece or two of lettuce. Top one with two slices of Applewood bacon, broken into pieces and arranged to fit. Top the other with the peppered bacon.

  3. Spread one side of the remaining toasts with mayonnaise and place mayonnaise side down over bacon.

  4. makes 2 small sandwiches
