Fresh Corn Quiche

Ingredients

  • 1 (-inch) deep dish pie crust
  • 4 eggs
  • 1 cup whipping cream
  • 1 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 cup chopped onion
  • 1 1/3 cups fresh corn kernels from about 2 large ears
  • 3/4 cup grated Swiss cheese
  • 2 slices bacon, fried and crumbled

Directions

  1. Prick bottom of pie crust and bake 5 minutes at 425 degrees.

  2. Combine eggs, whipping cream, salt, black pepper, onion and corn in a medium bowl. Beat until well blended. Stir in cheese.

  3. Pour into partially baked pie crust. Bake 10 minutes at 425 degrees. Reduce oven temperature to 350 degrees and bake 30 minutes more, or until almost set in center. Do not overbake. Sprinkle with bacon to garnish.
