Dill Vinaigrette

Ingredients

  • 1 cucumber
  • 1/2 cup chopped shallots
  • 1/2 cup (lightly packed) fresh dill
  • 1/4 cup honey mustard
  • 2 Tbsp. white- wine vinegar
  • 2 Tbsp. sugar
  • 1 clove garlic, finely chopped
  • 1/4 tsp. kosher salt
  • 1/2 cup olive oil
  • 1/2 cup canola oil

Directions

  1. Peel cucumber. Halve it the long way. Use a spoon to scrape out seeds and discard. Chop cucumber into chunks

  2. Pile all ingredients except oils into the blender or food processor. Pulse a few times. Swirl smooth.

  3. With machine running, slowly pour in oil until vinaigrette is thickened and glossy. Pour into a glass jar. Seal and chill.

  4. makes about 2 1/2 cups
