Refrigerator Cucumber Salad

Ingredients

  • 4 thinly sliced cucumbers
  • 1 lrg red onion sliced
  • 1 large green bell pepper or color of choice sliced
  • 1/2 tbsp salt
  • 2 cups white vinegar
  • 1/2 cup or so of white sugar
  • 1 tsp celery flakes
  • 1 tsp rd pepper flakes

Directions

  1. Mix cucumbers, onions, peppers and salt, set aside

  2. Put vinegar, sugar, celery flakes and pepper flakes in a pot and bring to a boil. Once mixture comes to a boil remove from heat and add 2 handfuls of ice until melted.

  3. Place all veggies in large mouth canning jars (2 quarts)

  4. Pour mixture over cucumbers, store in ref rig. Will keep up to 2 months.

  5. Makes 2 quart jars.
